2 1/2 cup soy milk
1 tbsp corn starch
2 tbsp coconut sugar
4 tbsp cocoa
3 oz chocolate
1/4 tsp peppermint extract (optional)
Instructions
Make a slurry of a little of the milk and the cornstarch. Add sugar and cocoa to the slurry, mixing well after each addition.
Pour the milk into a pot and add the slurry. Turn heat to medium, stirring constantly. When it comes to a simmer, turn off the heat and add the finely chopped chocolate and stir til melted.
Add peppermint extract if desired for a Christmassy twist.
