The Jucy Lucy
Ingredients
2 Beyond Beef or Impossible patties
3 slices vegan cheese
bun
Vegenaise
mustard
pickles
onions
Instructions
Wet the bottom of a glass or jar and press halfway into each patty. Spread mustard inside the depressions. Using a biscuit cutter the same size as the depressions, cut the cheese into rounds and place in the center of one patty. Cover with the other patty and pinch edges together thoroughly.
When they are sealed, round them up so the sides of the patty are smooth. Make sure there are no cracks.
In a pan over medium high heat, toast the bun. Reduce heat to medium low, place patty in the pan, cover, and cook on one side for eight minutes.
Remove cover, flip burger, and cook other side for eight minutes, covered. This low, slow cooking will ensure that the cheese will melt.
Spread bun with Vegenaise and mustard, add sliced onions and sliced pickles, and place patty on bun when it is done cooking.
Enjoy!
