Ingredients
8 oz vegan paneer
12 oz vegan buttermilk
4 oz unroasted cashews
1/4 tsp salt
1/8 tsp xanthan gum
Instructions
Mash paneer into curds using a potato mashed with round holes. Don't over mash.
Place buttermilk, cashews, salt, and xanthan gum in a blender and blend til creamy, 1 to 2 minutes.
Pour cream onto curds til desired texture is reached. Gently fold cream into curds, taking care not to over mix.
Store in a covered container. In the refrigerator it should last up to a week.
