Marinated Feta Cheese


 

Ingredients
8 oz vegan feta cheese, cut into bite sized cubes
1 cup olive oil
1 cup white wine vinegar
1 or 2 cloves garlic, minced
2 bay leaves
1/2 tsp black peppercorns
a few sprigs of fresh thyme
a few sprigs of fresh rosemary
a few sprigs of fresh oregano
a pinch of red pepper flakes
salt to taste

Instructions
Mix oil and vinegar well. Pack the feta cubes with the herbs and spices into a jar, pour in the oil and vinegar mixture and cover the jar.
Allow to infuse at room temperature til the feta takes on the flavor of the marinade, from 3 to 5 days.
When marinated to your liking, store in refrigerator.
