Collard Greens


Ingredients

2 bunches collard greens, stems removed and leaves chopped in bite sized pieces

1 cup vegetable broth

1/2 medium onion, chopped

2 cloves garlic, minced

2 tbsp vegan bacon bits

1 tbsp plant butter

salt and pepper to taste


Instructions

Heat a pan over medium heat. Add butter and onions to the pan and cook til translucent.

Add garlic and bacon bits and cook for one minute.

Add chopped collard greens and sauté for five minutes. Add vegetable broth, bring to a boil, cover pan, and reduce heat to low.

Simmer greens for one hour. Season with salt and pepper.
